Gluten/Wheat Free Products Notice
Please note that while we take every precaution not to contaminate our gluten and wheat free products, they are all prepared and cooked in the same bakery area that our bread is made. For most people this shouldn't pose a problem however anyone with a severe gluten or wheat intolerance may be affected by the flour left in the air during normal bread making.
FOOD ALLERGIES AND INTOLERANCES
If you have a food allergy or intolerance please tell our staff and our chef will be able to recommend suitable dishes for you.
Ghee (homemade) is clarified butter from which water and milk solids have been removed by gentle heating. It is claimed that ghee comes closest to having the ideal ratio of fatty acids. During the preparation the protein and lactose is removed making it suitable for those with lactose intolerance. We use small quantities in some of our soup preparations, for sautéing spices and our delicious hollandaise sauce.
Quinoa (pronounced Keen-wah) is technically not a true grain but a seed of the Chenopodium Plant. It is considered to be a complete protein as it boasts all eight essential amino acids. It is used as a grain because of its cooking characteristics. The seeds are gluten free which make this a nutritious alternative for those with a gluten sensitivity.
Himalayan Crystal Salt is mined by hand from deep below the famous mountain range. It is far more easily broken down and absorbed by the body. Unlike table salt which consists only of sodium chloride and additives Himalayan crystal salt contains a staggering 84 minerals and trace elements. Benefits include no threat to blood pressure or arteries and it assists the body’s ph balance.
Sweetener the jury is still out on sweeteners and whilst our policy at Loudons is not to either use or sell products that contain them, we respect your personal preference. The product we are happiest to provide is Xylitol. Sources and extraction vary greatly and the one we have chosen, Xylobrit, comes from birch trees. We are currently looking into another product which ticks all the boxes but have not found a UK supplier. We will keep you updated.
Asafoetida we use this when preparing our Ayurvedic Soups. It is considered good for the appetite and digestion with a warming quality and pungent taste.
Amaranth like quinoa, amaranth is a much underused super seed. High in protein and rich in vitamins, minerals and amino acids it also has cholesterol lowering qualities. We use amaranth in some of our soups.
Water our water filtration System was installed by Freshly Squeezed Water.
Fairtrade Policy on Tea and Coffee both Pekoe Tea and Artisan Roast, our tea and coffee suppliers, share our priority to give our customers a quality product without compromising the grower. Both can guarantee traceability and know that not only are the growers paid much more than the Fairtrade base rate but that socially just and environmentally sustainable structures are put in place.
